The South African Fatstock Judging Association (SAFJA) recently hosted another of its popular courses to train aspiring fatstock judges, and beef and sheep farmers, to accurately assess the quality of live animals intended for slaughter. Part of this training, which took place in KwaZulu-Natal’s Ladysmith district, involved expert carcass judges from the South African Meat Industry Company (SAMIC) teaching course participants about the correlation between the quality of a live slaughter animal and the quality of the carcass this animal produces.
