Stellenbosch University (SU) has provided substantial scientific evidence supporting a widely held belief: authentic Karoo Lamb – raised on the region’s natural veld – offers superior flavour and nutritional benefits compared to lamb finished in feedlots.

This conclusion is based on two recent studies led by Professor Phillip Strydom from the Department of Animal Science at SU. The studies examined the impact of various feeding strategies on meat quality, nutritional value and flavour. The focus was on Karoo lambs raised exclusively on natural veld, those supplemented with grain-based feeds, and those finished in feedlots.

Key Findings From The Study Include:
- Healthier fatty acid profile: Lambs raised entirely on the Karoo veld exhibited a lower omega-6 to omega-3 fatty acid ratio, which is closer to the ideal balance recommended for human health. In contrast, feedlot lambs had elevated omega-6 levels, which may contribute to increased inflammation in the human body.
- Preserved authentic Karoo flavour: The distinctive aroma and flavour of Karoo lambs were significantly diminished in lambs kept in feedlots, even when exposed for as little as 21 days. However, when lambs continued to have access to the Karoo veld and were responsibly supplemented – especially when slaughtered at weights of 40kg or more – the authentic flavour was preserved.
- Improved colour stability: Meat from lambs that fed on or had access to the Karoo veld demonstrated better colour stability during shelf life, thanks to the natural antioxidants found in Karoo vegetation. Colour is one of the first quality attributes consumers assess when selecting meat cuts.
“In summary, it can be concluded that supplementary feeding of lambs in the Karoo veld, along with optimal slaughter weights, is crucial for preserving the identity and health benefits of Karoo Lamb. Maintaining access to the veld and adhering to proper slaughtering weights are key to preserving this unique lamb’s characteristics,” concluded Charles Erasmus, Executive Manager at Karoo Lamb Consortium.
